Easy Traditional Shrimp and Pepper Tacos (Tacos Gobernador)

Ingredients

Shrimp

  • 1 lb Deshelled and Deveined Shrimp
  • 1 tbsp Olive Oil
  • 1 Tsp Each: Paprika, Cayenne Pepper, Salt, Pepper, Onion Powder, Garlic Powder

Tacos

  • 2 Poblano peppers (Seeds removed)
  • Corn Tortillas
  • 1 Block Oaxaca Cheese (Mozzarella as a substitute)
  • Lime Wedges
  • Cilantro
  • Optional: Favorite Salsa

Instructions

  • Marinate the Shrimp: In a bowl, toss the shrimp with olive oil and all the seasonings. Let them marinate for at least 15 minutes for maximum flavor.
  • Cook the Shrimp: Heat a cast iron skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque. Remove from heat.
  • Prepare the Poblano Pepper: Deseed the pepper. Hollow out.
  • Melt the Cheese: Add the Oaxaca cheese in the warm poblano and stir place on your skillet until it starts to melt. Char the pepper and melt the cheese. Cheese may spill out so you can cook them separately and precook the pepper first then add your cheese and shrimp later. Chop all together.
  • Assemble the Tacos: Spoon the shrimp and poblano mixture into corn tortillas. Toast the filled tortillas on a skillet until crispy and golden brown on both sides.
  • Serve & Enjoy: Garnish with fresh cilantro and a squeeze of lime. Serve immediately while hot and crispy.
