Tips for the Perfect Jerk Chicken Burritos
- Adjust the Heat: If you prefer a milder flavor, reduce the amount of habaneros in the salsa or opt for a milder jerk seasoning.
- Make Ahead: You can prepare the chicken and salsa ahead of time, making the assembly of the burritos quick and easy.
- Customize: Feel free to add other favorite ingredients such as avocado, corn, or pickled onions.
First, you want to marinate your chicken! It is best to let marinate for at least 4 hours to overnight, but if you are in a pinch, 30 minutes is the minimum time for the chicken to soak up that delicious flavor. When cooking your chicken, I cook it in a cast iron until the internal temp reaches 165F. Chicken thighs are the best because they are more tender and have better flavor than the breast meat.

For the salsa, dice your fruits and veggies into small pieces and set aside. You can also add avocado or bell peppers if you like. The mango really pairs nicely with jerk chicken flavoring.

I like making my burrito “California Style” which is when French fries are added. For this burrito, I love the addition of fried plantains. It adds this beautiful starchiness that is savory over sweet. You really get bursts of Caribbean flavor.

Finally, I make a rice and bean combination. I like to mix white rice and kidney beans together. Save yourself the hassle and use microwavable rice. You can cook it and season it if you like. Then pour the beans in with the cilantro and lime!
