Take a refreshing twist on salmon and rice with this easy mango-lime salsa. It is sweet, spicy and so quick to make. Not all proteins pair well with fruit in my opinion, but this honey-glazed salmon is perfect with the fresh mango! This was delicious over rice and a great source of protein and healthy fats.
For the salsa all you need to do is chop your ingredients into a bowl and mix. It is really customizable and I love how the lime brightens up the dish and balances out the sweetness from the mango. You can adjust the spice level as needed. If it is too spicy for your liking, reduce or remove the red chili flakes and deseed your jalapeño.
To marinate your salmon, I like using the spices listed below. It adds a lovely crust on the fish when you pan sear it. You can also bake or air fry as well. Bake on 375F for about 15 minutes or until salmon is cooked. Air fry at 390F for 12-15 minutes or until internally cooked.
Now I find this dish goes great with rice. Add a little cilantro and lime to the rice for extra flavor! Top with your salmon, salsa, and hot honey!
-2 3-4oz Salmon Filets
-1 Mango Diced
-1/2 Red Onion Diced
-1 Jalapeno Diced
-1/2 Cup Cilantro Minced
-1 Tsp Red Pepper Flake
-1 Tbsp Hot Honey
-1 Tbsp Chili Lime Salt
-1 Tsp Black Pepper
-Juice of 1 Lime
-1 Tsp Each: Paprika, Chili Powder, Chili Like Salt, Black Pepper
-Step 1 Dice all of your fruit and vegetables
Step 2 Add your diced produce into a small bowl and season and drizzle the honey. Mix well and set aside.
Step 3 Cut your salmon. Season well. Bake at 425F for 18-20 minutes or until salmon is fully cooked.
Step 4 Plate your white rice and salmon. Gently plate your mango salsa on top and drizzle with some extra hot honey.
