Gnocchi and soup for some reason just go together so well. I am a huge gnocchi fan and I think that it not only makes a great pasta, but also a delicious soup additive. The soft pillowy texture is perfect with creamy sauces and broths. I have to say that this soup is the ultimate comfort food when you want something savory but not overly heavy.
This can all be made in one pot. I have found I have been gravitating towards one pot meals lately because the dishes are overwhelming. So making this is easy and doesn’t require a lot of clean up. So grab your pot and glass of wine and make this “hot girl” soup (because we are all in our hot girl soup era).

Take 2 small chicken breasts and dice into small pieces. Set aside. Mince 2 cloves of garlic and 1/2 white onion. In a pot, add 1 tsp of oil and your onion and garlic. Sauté for 1 minute. Add your diced chicken and season to your liking. I used Italian seasoning, salt, pepper, and smoked paprika.

Since your chicken is diced, you only need to cook this until your chicken has some light brown color, about 5-6 minutes. If you find it isn’t all the way done, that is okay because it will simmer in the broth. Next, pour in 4 cups of chicken broth and 1/3 cup heavy cream. Let this come to a low rolling boil. Add in your gnocchi and let the gnocchi cook in the broth. Then, add 2 tbsp of broth to 1/2 tbsp of flour or cornstarch. This will help thicken the broth.

Lastly, add 2 cups of spinach and some freshly grated parmesan cheese to your soup and mix well. Serve and top with more parmesan!
