If we are going to break the internet, we are going to do it with this recipe. This easy 1 pan dinner has got to be one of the tastiest chicken dishes you can find! What I love about this dish is that you only need 1 pan to do it, so less mess! It is creamy, salty and savory and will have you adding this to your weekly menu!

First marinate your chicken with a drizzle of olive oil and 1 tsp each of salt, pepper, garlic powder, onion powder, paprika, and Italian seasoning. Mix well. In a hot cast iron or pan of choice, add 1 tbsp of sun-dried tomato oil. Sear your chicken on each side until golden brown. Then reduce the heat and cook the chicken for about 15-18 minutes. You will be putting the chicken back into the pan so if it is not entirely cooked, that is okay since it will simmer in the sauce!

Remove the chicken from the pan and set aside. Leave all of the good brown bits from the pan. Add 1/2 diced white onion to the pan. Mix with the good brown bits at the pan. Deglaze the pan with 1/3 cup chicken broth. Let it simmer and add a jar of sun dried tomatoes. Once the onions are translucent (5 minutes) pour in 1/2 cup of heavy cream and 1/3 cup of parmesan cheese. Squeeze a small wedge of lemon and let simmer on low heat for 5 minutes. When the sauce has thickened, add your cut spinach.

Then put the chicken back into the pan and finish cooking until the internal temp is 165F. Top off with parmesan cheese and bacon! Enjoy!
