Whether you’re a fan of spinach and artichoke dip or just looking for a new twist on grilled cheese, this Spinach and Artichoke Chopped Grilled Cheese is sure to impress. It’s creamy, savory, and packed with flavor—everything you could want in a sandwich. Plus, it’s quick to prepare and perfect for any meal of the day.
When you think of grilled cheese, you probably imagine the classic cheddar-on-bread combo. But what if you could take that same comfort and elevate it with the rich flavors of a spinach and artichoke dip? That’s exactly what this meal does! It’s my inventive way to turn a beloved appetizer into a satisfying, cheesy sandwich that’s packed with flavor, texture, and all the cheesy goodness you love.

This recipe combines creamy cheese, tender spinach, tangy artichokes, and a hint of garlic in every bite. The best part? The ingredients are chopped together for an evenly distributed filling that gives you a perfect bite each time.
Why You’ll Love This Spinach and Artichoke Chopped Grilled Cheese
Spinach and artichoke dip is always a crowd-pleaser, so why not turn it into a handheld, melty, crispy sandwich? This version offers the best of both worlds: the creamy, cheesy filling of your favorite dip with the crispy, buttery exterior of a perfectly toasted grilled cheese. It’s indulgent but feels just a little bit fancy, making it the perfect sandwich for a weekend treat or even a cozy weeknight dinner.
Why This Sandwich Works
- Creamy and Tangy Filling: The spinach and artichoke mixture is inspired by the classic dip, but turning it into a sandwich makes it even more satisfying. The cream cheese and mozzarella create a creamy, gooey filling that complements the tender spinach and tangy artichokes.
- Perfect Texture: By squeezing the excess liquid from the spinach, you avoid a soggy sandwich and get the perfect balance of crispy bread and soft filling. The garlic adds a subtle kick of flavor, making this sandwich feel like a restaurant-worthy meal.
- Customizable: You can easily tweak this recipe to suit your taste. Want a bit more tang? Add a splash of lemon juice or some Parmesan cheese. Prefer a richer flavor? Swap in Gruyère or fontina instead of mozzarella.
Pro Tips for the Best Results
- Use fresh or frozen spinach: If you’re using frozen spinach, be sure to thaw it completely and squeeze out as much liquid as possible. Fresh spinach can be sautéed and cooked down, then squeezed to remove the moisture.
- Try different bread options: While sourdough or ciabatta work great, you can experiment with other types of bread like rye, whole grain, or even brioche for a sweeter contrast.
- Don’t rush the toasting process: Keep the heat at medium and cover the pan to ensure the cheese melts evenly without burning the bread.
- Make it a dip combo: Serve your sandwich with a small bowl of marinara sauce for dipping, or even a tangy ranch if you’re feeling indulgent.

The Process
1. Prepare the Filling
Start by spreading your softened cream cheese directly onto your cutting board. This method makes it easy to blend all the ingredients together evenly. Next, add the shredded mozzarella, cooked spinach (make sure all excess liquid is squeezed out to prevent soggy bread), chopped artichoke hearts, and minced garlic clove. Sprinkle with a bit of salt and pepper to season the filling.
2. Chop Until Well Combined
Using a large knife or a bench scraper, chop everything together on the cutting board. The goal is to mix the cream cheese with the spinach, artichokes, mozzarella, and garlic. As you chop, the ingredients will come together into a cohesive filling. Keep chopping until it’s evenly distributed but still has some texture—don’t chop it into a paste.

3. Assemble the Sandwich
Take one slice of bread and spread your chopped spinach and artichoke mixture evenly over it. Then, place the other slice of bread on top, pressing down gently to help the filling stick together.

4. Toast the Sandwich
Heat a nonstick skillet over medium heat and add a small amount of butter to the pan. Let the butter melt and begin to sizzle. Place your sandwich into the skillet, and cover the pan with a lid to help the inside cheese melt while the bread toasts. Cook for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese inside is melted.
5. Serve Hot
Once your sandwich is perfectly toasted, remove it from the skillet. Let it cool for just a minute, then slice it in half and serve it while it’s still hot and melty. Each bite is a delicious combination of cheesy, garlicky, and tangy flavors with the perfect crunch from the toasted bread.
