If you’ve never had a torta, you’re in for something special. This slow cooked chili braised beef torta brings deep, smoky heat and tenderness that melts in your mouth—exactly what you want in a sandwich that means business. The beef is braised low and slow with a trio of dried chiles, beef bouillon, onion, and garlic, until it practically falls apart. Pile it onto soft telera rolls with a limey avocado mash, fresh veggies, and your favorite pickled heat—and you’ve got a sandwich you’ll be craving all week.

Instructions
1. Prepare the chili braised beef:
In a large pot or Dutch oven, add your chuck roast, quartered onion, garlic cloves, all the dried chilies, bouillon cubes, and 6 cups of water. Bring to a gentle simmer over low heat and cover. Cook low and slow for 8–12 hours, until the meat is tender and falls apart easily.
Alternatively, throw all of these ingredients into a slow cooker and let it go on low for 8 hours—no need to babysit.
Once done, remove the beef and shred it with two forks. Optionally, blend a bit of the broth and chilies to create a thickened sauce, then toss the beef back in to soak up the flavor. Reserve extra broth for dipping if you want to go torta ahogada-style!
2. Make the lime avocado spread:
Mash your avocados in a bowl. Add lime juice and salt, and mix until smooth and creamy. Set aside. This is your tangy, cooling layer that cuts through the richness of the beef and chiles.
3. Assemble your torta:
Slice your telera rolls and lightly toast them if you like a little crunch. Smear the bottom bun with a generous scoop of avocado spread. Pile on shredded lettuce, tomato slices, red onion, and as much braised beef as your bread can hold. Top with those sweet and spicy jalapeños and close it up.

Optional but delicious: add a melty slice of cheese, or toast the sandwich on a skillet with a press to melt and seal it all together.
Storage & Tips
- Leftovers: The chili beef keeps beautifully in an airtight container in the fridge for up to 4 days. Reheat gently with a splash of the braising liquid to keep it juicy.
- Make it your own: Add crema, queso fresco, or even a fried egg if you’re feeling extra. Want it spicier? Add hot sauce or more arbol chiles to the braise.
- Bread tips: Telera rolls can be found in the bakery section of most grocery stores or Mexican markets. If you can’t find them, bolillo rolls or even soft sandwich buns will do in a pinch.
These tortas are flavor-packed, filling, and built to impress. Whether you’re feeding a group or just meal-prepping for the week, this recipe gives you restaurant-quality sandwiches without the high price tag. Don’t skip the pickled jalapeños—they’re the final touch that brings it all together.
