If elegance had a name, it would be this side dish! I found these beautiful purple asparagus at the store and had to try them! You can also do this recipe with regular green asparagus as well. The freshness of the herbs and zesty lemon will brighten this vegetable. I love the roasted taste of the asparagus paired with the herbs. It is absolutely delicious and I recreated this dish from a high-end restaurant I went to.

First, take your asparagus and give them a good wash. Cut the ends off, I do about an inch-2 inches. Next, lay them on your lined roasting sheet. Season to your liking, but I used oil, salt, pepper, and garlic powder.



Next, set your oven to 375 F and bake for about 15-18 minutes depending on your thickness of asparagus. While your asparagus is roasting, it is time to make the herb topping. First, finely chop mint, parsley, and basil. I used 1/4 cup of each herb.



Add juice of 1/4 lemon and zest of 1 lemon. Chop up 1/4 cup pistachios and add to the herb mix. Drizzle about 2 tbsp of olive oil in and give the herb and pistachio mixture a stir.

Once the asparagus is done cooking, remove and set on serving dish. Top with the herb mixture and some more lemon zest!

Roasted Asparagus with Herb and Pistachio Topping
Ingredients
- 1 Bunch Asparagus
- 1 Tsp Each: Salt, Pepper, Garlic Powder
- 2 Tsp Olive Oil
Herb and Pistachio Topping
- 1/4 Cup Parsley Minced
- 1/4 Cup Mint Minced
- 1/4 Cup Basil Minced
- 1/4 Lemon Juiced
- 1 Lemon Zested
- 2 Tbsp Olive Oil
- 1/4 Cup Pistachios Chopped
Instructions
- Wash and cut your asparagus about 1 inch from the bottom. Discard bottoms.
- Pat asparagus dry and lay out on a lined baking sheet.
- Season with oil, and seasonings.
- Bake at 375 F for about 15-18 minutes.
Herb and Pistachio Topping
- To a small bowl, add chopped herbs, lemon juice, lemon zest, olive oil and pistachios. Mix well.
- Plate your roasted asparagus and add topping. Garnish with additional lemon zest
