I do not make a ton of sandwiches as recipes, but when I do, I make them with the intent that these will be some of your absolute favorites! This Southwestern Chicken sandwich is layered with flavor and only takes a few ingredients!

First, you need to caramelize onions. To do so is really easy. In a skillet on medium to high heat, add oil and your onions. Add 1 tsp of sugar and cook down until a deep brown color and they are tender. Remove from the pan and set aside.


For your chicken, cook in the same skillet with oil on medium to high heat for 6-7 minutes a side depending on the thickness of the chicken. I seasoned my chicken with a mix of Cajun seasoning, paprika, garlic, and onion powder (roughly 1 Tbsp of seasoning). While your chicken is cooking, you can make the chipotle mayo. In a small dish, add mayo, crushed chipotles or chipotle paste, lime juice, pinch of salt, and garlic powder. Give it a stir and set aside.


Next, you want to toast your bread. For my bread, I went to my local deli for sandwich rolls. They are fluffy on the outside but crisp up amazing in the toaster or pan. Gently butter and toast until the tops are golden brown. You can use any bread you want, but I find that the sandwich rolls are the best.



To assemble, add the chipotle mayo, then fresh crisp lettuce. Next, add your sliced chicken, cheddar cheese and melt that down in the toaster or with a torch. Lastly, add those caramelized onions and a little more chipotle mayo. Enjoy!

Ingredients
- 1 Chicken Breast Seasoned with Cajun Seasoning, Paprika, and Garlic and Onion Powder
- 1 Sandwich Roll
- 2 Leaves Fresh Lettuce
- 2 Slices Cheddar Cheese
Chipotle Mayo
- 1/2 Cup Mayo
- 2-3 Tbsp Chipotles Crushed or Paste
- Juice of 1/2 Lime
- Pinch of Salt and Garlic Powder
Caramelized Onions
- 1/2 White Onion Sliced
- 1 Tbsp Olive Oil
- 1 Tsp Sugar
