
Sometimes, we want a mess free and easy dinner recipe. Well you are in luck, this one is for you! It is full of protein, and veggies, so not only is it healthy, but it is packed full of flavor. And the best part, it only requires one pan, so clean up is a breeze!

What I love about this dish and how we can get a lot of flavor in a short period of time. With the perfect spice blend, you can hit all the notes and amp up your chicken and veggies. For my spice blend, I used Tony’s Chachere’s Cajun seasoning, salt, pepper, paprika, cayenne, onion powder, garlic powder, and some dried parsley. This gave a nice balance of flavor throughout the dish.

I first diced up my veggies into larger “rustic” cuts. There is no right or wrong way, but I wanted my veggies to be about the same size as my cubed chicken and sausage. For my vegetables, I used bell pepper, onion, and zucchini. Once I cut my vegetables, I set them aside and diced my protein.

I got my protein from the meat counter at my store. I asked for 3 Italian sausages and 2 large chicken breasts. You can also use Andouille sausage as a replacement, but I wanted hot Italian instead. I heated my oiled cast iron on medium to high heat. Then I put in my proteins and seasoning. I wanted a nice dark char on my meat, hence using a cast iron. You can use nonstick as well, it just may not have as much charring color. About halfway through my meat being cooked, I added my veggie mixture. Give it a stir and cook until all of the protein is fully cooked.

Once it is cooked, take it off the heat and serve. This dish can be served with rice or potatoes. I find that this compliments nicely to a hearty starch. Enjoy this healthy meal and relax on the easy clean up!
One Pan Cajun Sausage Chicken Skillet
Ingredients
- 2 Chicken Breasts
- 3 Italian Sausages
- 2 Zucchini
- 2 Bell Pepper
- 1/2 Large Onion
- 1 tbsp Each of Salt, Pepper, Onion Powder, Garlic Powder, Cayenne, Paprika, Dried Parsley, Cajun Seasoning
- 2 tbsp Olive Oil
Instructions
- First, dice your veggies and chicken.
- Heat a cast iron or skillet on medium high heat with oil.
- Add your protein and season. Cook until protein is halfway cooked, about 4 minutes.
- Add your vegetables and stir. Cook until protein is fully cooked.
- You can serve this as is or with rice or potatoes.
