I have to admit that when I was a kid, I did not eat meatloaf very often. I remembered eatings store bought ones from the freezer section, and they never did much for me. But I wanted to retry it and see if I would like it, and boy was I shocked at how easy, cheap and flavorful meatloaf was. Maybe it was my recipe, but I will be making this as a weekly staple. Even my boyfriend who does not like meatloaf, scarfed this up! The sweet and spicy bbq flavor gives the meatloaf dimension. There are layers of flavor and with each bite, a new flavor hits your mouth!

This recipe is really, really simple. First in a mixing bowl, add your ground beef. I would not go any less than 80/20 ground beef. You do not want it too fatty, but a little is just fine! To your ground beef, add diced onion, jalapeño, onion, bread crumbs, eggs, seasonings (salt, pepper, Italian seasoning, paprika, chili powder, and red pepper flakes), your bbq sauce, and ketchup!



Give this a thorough mix. I used a glove and got my hand in there to mix well. Then in a nonstick or greased bread tin, place your meatloaf into the pan and oven bake at 350 for 40 minutes. While the meatloaf is starting its cook, its is time to make the sauce. What I liked specifically about this sauce is the added smokiness in the flavor. It added a lot of depth to the meatloaf. For the sauce, mix bbq sauce, ketchup, salt, pepper, Italian Seasoning, brown sugar, and vinegar into a bowl and mix.



When the meatloaf has cooked of r40 minutes remove and top with the sauce. Place it in the oven for another 20-30 minutes or until the inside is fully cooked. This was absolutely delicious with creamy mashed potatoes and some green beans on the side! For my sauces, I used Kraft Heinz. I found that the flavors were familiar, and made this taste the best, but if you have a favorite sauce, feel free to use that!


Easy Sweet and Spicy BBQ Meatloaf
Ingredients
Meatloaf
- 2 Lb 80/20 Ground beef
- 2 Diced Jalapeños
- 1 Diced Small White Onion
- 3-4 Cloves Minced Garlic
- 1/4 Cup Chopped Parsley
- 1/2 Cup Bread Crumbs (Can Be Gluten Free)
- 2 Eggs
- 1 Tsp Each: Salt, Pepper, Italian Seasoning, Paprika, Chili Powder, Red Pepper Flakes
- 1/2 Cup BBQ Sauce (I used Heinz Bullseye BBQ)
- 1/2 Cup Heinz Ketchup
Sauce
- 1/2 Cup BBQ Sauce
- 1/2 Cup Ketchup
- 1 Tsp Each: Salt, Pepper, Italian Seasoning
- 1 Tbsp Brown Sugar
- 1 1/2 Tbsp White Vinegar
Instructions
- In a large mixing bowl, add all of the meatloaf ingredients and mix well. You can use a fork, spoon or your hand.
- In a nonstick or greased bread tin, add your meatloaf.
- Cook at 350 for 40 minutes. This is only partially cooked.
- While the meatloaf is cooking, take your sauce ingredients and mix them together in a bowl. Set aside.
- When it has been 40 minutes, remove the meatloaf from the oven and cover the top with the sauce you made. Put it back into the oven for another 20-30 minutes, or until it is cooked on the inside.
- Remove and let cool for 5 minutes. Serve with mashed potatoes and green beans for a full meal!
