Sometimes creating new and exciting lunch ideas can be daunting, but this recipe allows you to have a flavorful, healthy and filling lunch on the cheap! I love pesto, so I found this recipe incredible and easy to take to the office.

For my wraps, I used pesto, left over shredded chicken, spinach, sweet and hot peppers, some mozzarella cheese, and avocado. The wrap is packed with veggies and the wrap I used was Keto. They are low calorie and carbs.

I made my own pesto because I am growing basil, but you can definitely use store-bought. I recommend Costco’s pre-made pesto. To make homemade pesto, get your blender or food processor ready. I really do not measure my pesto ingredients except through taste, but here is a rough guideline. Use 1-2 cups basil leaves, 1/2 cup parmesan, 1/4 cup pine nuts, 1 tsp of salt, 1 tsp lemon juice, and 1/4 cup olive oil. If you find your pesto is a bit dry or still needs more olive oil, add it 1 tbsp at a time and blend in between. Some people like it more runny, others like it thicker. This recipe is some where in the middle.


I like to make sure my wraps have extra pesto taste, so I toss my shredded chicken in the pesto as well as saving some for the wrap.


To assemble the wrap, first get your wrap and spread a layer of pesto on it evenly. Next, get your spinach and lay that in the wrap. Add your pesto chicken, cheese, peppers, and avocado and gently wrap into a “burrito”. You can finish here or you can toast it on medium heat to get the outside more crispy and melt the cheese. Something you can also do is add a little mayo in it as well!


Easy Pesto Chicken Lunch Wrap
Ingredients
- 2 Oz Shredded Chicken
- 1/2 Cup Pesto Pre-made or homemade
- 1/2 Cup Spinach
- 1/2 Avocado
- 1/2 Cup Cheese Mozarella
- 4 Hot Sweet Peppers
- Mayonaise Optional
Homemade Pesto
- 1-2 Cups Basil Leaves
- 1/2 Cup Parmesan Cheese
- 1/4 Cup Pine Nutes
- 1 Tbsp Salt
- 1 Tbsp Lemon Juice
- 1/4 Cup Olive Oil add 1 Tbsp Olive Oil at a time if pesto is too thick
Instructions
- Add Pesto ingredients into a blender or food processor.
- Toss your shredded chicken into 1/4 cup pesto and make sure it is well coated.
- Lay down your wrap and add pesto, mayo (optional), spinach, chicken, cheese, peppers, and avocado.
- Carefully wrap up in a burrito style.
- Optional: toast on medium heat to crisp up the outside of the wrap.
