Taco night is always a fan favorite in my household. I personally find fried fish tacos underrated as they are deliciously crispy and rounded out with the perfect cold slaw. I found this recipe was easy to make and required little prep.

First, to make your slaw, cut cabbage and carrots into thin slices and place into a bowl. You can also just use a premed slaw kit! Add 1 tbsp of mayonnaise, salt, pepper, and lime juice. Mix well and set in the fridge.

For the fish batter, use 1 cup of flour to 1/2-3/4 of beer of your choice. I happened to have canned beer, but you can really play around with flavor here. Add some salt, pepper, garlic powder, and paprika into the batter and mix well. You want about a pancake consistency.

Dip your sliced cod into the batter and fry until golden brown. Each piece took about 5-6 minutes to fry. For the chipotle mayo, add mayonnaise, lime juice, and chipotle sauce. Mix well. To assemble, add your fish to your toasted corn tortilla. Next top with your slaw, optional jalapeños, chipotle mayo, and cilantro!
