Whether you’re craving a quick lunch or planning ahead for the week, this recipe offers a satisfying, protein-packed meal that’s both delicious and versatile.
Why You’ll Love This Chicken Salad
This chicken salad isn’t your typical recipe; it stands out because of its unique combination of Mediterranean-inspired ingredients. The sun-dried tomatoes and artichoke hearts add a rich, savory flavor, while the red onion and spinach provide a fresh crunch and nutritional boost. Using rotisserie chicken makes this dish even more convenient without sacrificing flavor. Plus, it’s packed with protein and healthy fats, making it a wholesome meal choice that will keep you full and energized throughout the day.
How Easy Is This Recipe?
One of the best things about this chicken salad is how simple it is to prepare. With just a few basic steps, you can have a delicious meal ready in no time. Start by dicing or shredding your rotisserie chicken to your desired consistency. Then, finely chop the artichoke hearts, sun-dried tomatoes, cooked spinach, and red onion. In a large mixing bowl, combine the chicken and veggies with mayonnaise, sun-dried tomato oil, Dijon mustard, white wine vinegar, and seasonings. Stir everything together until well incorporated, then let it chill in the fridge for at least an hour to allow the flavors to meld.
Great for Meal Prep and Versatility
This chicken salad is an excellent option for meal prep because it stays fresh and flavorful in the fridge for up to four days. Store it in an airtight container, and you’ll have a quick lunch or dinner option ready to go. Serve it on croissant bread for a delicious sandwich, wrap it in a lettuce leaf for a low-carb alternative, or enjoy it straight out of the bowl. Add-ons like crispy bacon, fresh lettuce, and sliced tomatoes can elevate the dish and add extra texture and flavor.
Frequently Asked Questions
- Can I use fresh chicken instead of rotisserie?
- Absolutely! Cooked and shredded chicken breast works well as a substitute, but rotisserie chicken adds extra flavor and moisture.
- How long should I let the chicken salad sit before serving?
- Letting it sit for at least an hour allows the flavors to fully develop, but overnight refrigeration yields even better results.
- Can I make this dairy-free?
- Yes! Simply swap the mayonnaise for a dairy-free alternative or mashed avocado for a creamy texture.
- What bread pairs best with this chicken salad?
- Croissant bread adds a buttery, flaky touch, but whole-grain bread or wraps work wonderfully for a healthier option.
This easy chicken salad recipe is sure to become a go-to favorite in your household. Whether you’re preparing it for a busy workweek or enjoying it as a quick meal, it’s packed with flavor, nutrients, and endless possibilities!
First, dice all of your ingredients. You want them to be small. I like using rotisserie chicken because it is premade and easy to shred or dice. Plus it has the best flavor over canned or boiled.

Once everything is finely diced, add everything to a mixing bowl. I like to let mine sit in the fridge for at least 1 hour but it is great made a day ahead of eating. The flavors can marinate longer.

Then it is time to assemble! I found this croissant bread at my local store and immediately had to buy! It was the perfect buttery flavor and with the salad and crispy bacon it seriously could not have been better! I hope you enjoy this recipe and try it for yourself!
