If you want an easy weeknight dinner, I find that air fryer salmon is by far the easiest protein to cook! It only takes 12-14 minutes and you’re done! I like this dinner bowl because you can add fresh arugula, spinach, or even broccoli. The lightly coated dill potatoes are creamy, roasted, and crispy!

First, for your salmon, remove the skin if you like. I personally prefer the salmon skinless in bite form. Next, simply season to your liking with 1 tbsp olive oil and seasoning of choice. I prefer a simple salt, pepper, paprika, onion powder, and garlic powder blend. But you can use a pre-made one! Air fry at 390F for 12-14 minutes.

Lastly, for the lemon butter sauce, add 1 tsp of butter into a pan with minced shallot. Let this lightly sauté but not brown. Slowly pour 1/4 cup of white wine (or chicken broth) and 2 tsp of lemon juice. Let simmer. Let it reduce to half. Then turn off the heat. Finally, slowly melt 4-6 tbsp of butter. This will thicken your sauce. Then optional is to strain out the shallots! For a chunkier sauce, leave them it. It is totally personal preference!

For your potatoes, simply slice your mini potatoes and toss them in oil, salt and pepper. Preheat your baking sheet and carefully place on the baking sheet. Bake at 475 for about 12 minutes. When your potatoes are done, let cool a bit and add 1 1/2 tbsp of sour cream, fresh dill and a squeeze of lemon. Toss.
