If you want a new take on fried rice, you came to the right blog! I absolutely love bang bang chicken and fried rice, so why not have both! The crispy and saucy chicken goes perfectly with the staple toasted rice. This recipe is simple and only has 3 steps.

First, you want to coat your chicken and fry. You want the outside to be golden brown and crispy but also have tender chicken in the middle! Make sure your coating is a bit sticky. If it is too try you can add water a little bit at a tine.



Once the chicken is cooked, take it out of the pan and sauté your vegetables. For the rice portion, you want to use precooked rice. I find that day old rice is the best. The tender cooked rice gets the delicious fried outside that way. Add in your sesame oil and soy sauce. Mix well.



Finally, mix your sauce ingredients together and toss in your chicken. Plate together and enjoy!

Ingredients:
Fried Rice:
1 1/2 cups of cooked white rice (preferably a day old)
1 shallot chopped
2 cloves garlic
1 tsp ginger
1 tsp red pepper flakes
3/4 cup frozen carrots and peas
2 tsp sesame oil
4 tbsp soy sauce
2 eggs
Bang Bang Sauce:
1/2 cup mayonnaise
2 tbsp garlic chili paste
2 tbsp spicy honey
2 tbsp sriracha
1 tsp salt and pepper
Chicken:
2 chicken breasts diced
1/4 cup flour
1/4 cornstarch
Salt and pepper to taste
1/4 cup of water (add 1 tbsp at a time if more is needed)
1/2 cup of fry oil
Instructions:
In a bowl, add your diced chicken, flour, cornstarch, seasonings, and water together. Mix well. You want the coating on the chicken to be a bit sticky. If it is too dry, add 1 tbsp of water at a time.
In a wok or deep frying pan, fry your chicken until the outside is crispy golden brown and the chicken is cooked through. Roughly 10-12 minutes.
Remove your chicken and set aside. In the same wok, add more oil and your shallot, garlic, and ginger. Fry until fragrant, about 30 seconds to a minute. Toss in your frozen peas and carrots and mix well. Add your precooked rice into the wok and mix well. Next, pour in your sesame oil and soy sauce. Season to your liking.
Push all of the fried rice to the side of the pan and scramble 2 eggs. then mix all together. Lastly, in a small bowl, mix your sauce ingredients. Toss your chicken in the sauce and plate over your rice. Garnish with optional green onion and enjoy!
